Pillaf Rice, also known as Saffron Rice, is popular all over the Indian subcontinent and the Middle East as the must have festive dish without which an auspicious occasion would be incomplete.
2 cups Superior Quality Basmati Rice
3 cups Water
1 medium Onion, sliced
A mix of Spice Trail Pillaf Spice
1 tsp Cummin seeds
2 tsp Ghee
A pinch of pure Saffron Strands
Salt to taste (about 1-2 tsp)
Wash rice, drain and set aside. Soak saffron strands in 1 tblsp of luke warm water. In a heavy bottomed pan, heat the ghee, throw in Spice Trail Pillaf Spice (make sure you get a bit of all the spices from the jar), followed by the cummin seed. Stir for a minute, add onions and fry until soft and golden. Add rice, water and salt, put on the lid and cook on a high flame. As soon as it comes to a boil, lower the flame, pour in the soaked saffron, and cook covered for about 15-20 minutes. Let the rice rest for 15 min before serving.
