Fish Paatio (Curry)

Spice Trail’s Bombay Curry Powder is a robust blend of spices, versatile in all kinds of cuisine; great with all types of meat, chicken, fish and even veges. I find this spice blend totally soul satisfying.

2 medium Mackerel Steaks
Or any firm fish of your choice
8-10 Curry leaves
2 cloves Garlic fresh, sliced
2 tsp Spice Trail Bombay Curry Powder
1 cup Tomatoes, crushed
1 tsp Salt
1 tblsp Oil

In a heavy bottomed sauce pan, heat the oil. To it add the sliced garlic and curry leaves and stir on a gentle flame until garlic looks soft. Add in Spice Trail Bombay Curry Powder and salt; stir for a minute then add the tomatoes. Blend in well and simmer for about 5 minutes. Gently put in the fish and smother it in the sauce. Put on the lid and simmer on a low flame until fish is thoroughly cooked. Serve with hot steamed rice with a sprinkle of fresh coriander leaves and a twist of lemon.
