Brown Lentils with Mint & Fenugreek
1 cup Brown Lentils
1 medium Onion, roughly chopped
2 tsp Garlic, crushed
2 tsp Ginger, crushed
½ cup Fresh mint herb, chopped
1 tblsp Fenugreek leaves
Salt to taste
Soak the lentils for 1-2 hours then strain and wash. In a pot or pressure cooker, put in all the above ingredients and cook until lentils are soft.
2 tblsp Oil
2 tsp Spice Trail Madras Sambhar Spice
In a frying pan, heat the oil, add the Spice Trail Madras Sambhar Spice, sautee for a minute then pour into the pot of lentils. Stir in well and simmer for about 5 minutes. Add water if you want the lentils soupy. Serve hot, with a squeeze of lime, steamed rice or bread.
Optional – Sprinkle fried onion and fresh coriander herb just before serving.
